Sautee celery and onion in grape seed oil. After celery and onion are browned, mince or use a grinder to add fresh garlic. Measurements are approximate. 1 med onion, 3-5 stalks celery, 2-3 garlic cloves.
Fill a large pot filled with water and 3-4 tablespoons of chicken bullion. You can substitute with liquid bullion if you prefer (water not needed if you choose this method).
Boil for 40-60 in-if using potatoes, add right away, if noodles add after it has boiled for about a half hour so they do not overcook. Next add frozen seafood ,salt, pepper, bay leaves and boil for another 20 min. Add tilapia last and cook for 10 min if fresh, if frozen you can add along with the other seafood.
Add milk and butter ( about 2-3 cups milk and 1/4 cup butter and bring to another boil for 10 min and then simmer.
Add salt pepper and bay leaves for flavor.
This is not a thick seafood chowder just creamy and full of seafood flavor. I am not a measurer so do your best and taste as you go.
